Spanish Omelette


Teenagers learn quickly by cooking their own meals
and making spanish omelettes is a good way to begin

Serves 2

Chop finely 1 small onion, 2 oz (50g) bacon rashers.

Chop roughly 8oz (250g) cooked potato

Heat 1 table spoon of oil in a 7" (18c) pan. cook onion gently till soft.

Add bacon and potato and cook till just browned.

Beat 4 Scottish eggs lightly in 4tea spoons of cold water, add salt & pepper.

Pour eggs into pan with vegetables cook fairly quickly moving
cooked egg from the pan base several times. To finish put pan
under a heated grill for about 1 minute.

Serve the omelette flat or cut into wedges with green peas or salads.
