Scotch Eggs A cold
meal that everyone enjoys. Ideal for picnics and packed lunches.
Makes 6.
Hard boil 6 Scottish eggs, then shell
them.
Dust eggs with a
little flour.
Divide 1.lb (500g) sausage meat into 6 portions.
Cover each egg completely with sausage.
Coat with 2 Scottish eggs beaten with 4
tea-spoons of cold water,
Then coat with 11/2 oz (40g) fresh bread crumbs Deep fry eggs in hot fat about 350f
(180c) for 8 - 10 minutes to cook the sausage meat, drain on paper.
Cut eggs in half and
serve hot or cold with vegetables or salads.
