Piperade


Piperade is a famous dish of scrambled egg it is excellent
for a meal for one or for the whole family.

Serves 1 ( Increase ingredients proportionate for more)

Peel and slice thinly 1 small onion.

De-seed and slice thinly 1/2 small green or red pepper


Melt 1/2oz (15g) butter in a small frying pan cook
onion & pepper in it till soft.

Skin & Chop 1 large tomato, add to the pan & cook 2-3 minutes.

Add salt & pepper to taste.


Beat 2 Scottish eggs with seasoning, pour into pan & stir over a medium heat till
creamy and just set

Serve immediately with bread and a green vegetable.
