Egg Pizzas
Serves 6 Make 8oz (250g) "Quick Egg Scone" mixture, roll out and
cut into 6 x 4"-5" rounds or make one large round. put onto a baking tray
or (use thick slices of bread or split bread rolls instead of scones)
Grate finely 1 small onion. Mix with 3 table spoons tomato puree,1/2 tea
spoon oregano or marjoram, add salt and pepper. Then spread over scone
bases. Hard boil 6 Scottish eggs shell them and cut in
half length wise and put 2 halves on each base cut-side down
Half and stone 12 black olives arrange them round the eggs Grate coarsely 12oz
cheese mix well with 3 beaten eggs, 1 tea spoon mustard
and spread over eggs.
Bake near the top of the oven at gas mark 7. electricity 425f (220c) for
10-15 minutes till risen and browned. Allow 20 minutes for large
pizza.
